This entremet combines rose and pistachio inspired by Middle Eastern flavours. It features a rose crème diplomate, a salted pistachio caramel insert, pistachio crunch, and a pistachio madeleine sponge. A baklava-style crisp layer adds texture. Finished with a pastel green mirror glaze, roasted pistachio pieces and edible dried rose petals.
