Inspired by the capital of chocolate, this entremet is all about chocolate and hazelnut. It features a 62% dark chocolate bavaroise mousse, a chocolate pastry cream insert, and a hazelnut praline with whole roasted hazelnuts. The base is a rich brownie made with almond powder for a soft texture. Finished with a chocolate mirror glaze and roasted hazelnuts.
