This entremet combines tropical flavours of passion fruit and coconut. It features a tangy passion fruit gel, a coconut curd, and a coconut and vanilla mousse. The base is a lime madeleine sponge. Finished with a passion fruit mirror glaze and vanilla whipped cream.
